Using Tap Water And Salt In Cooking May Make Food Toxic

Cooking with chloraminated tap water and iodised table salt could put potentially harmful toxins in your food, a new study has warned.

Researchers from the Hong Kong University of Science and Technology and Nanjing University in China found several molecules that are almost completely new to scientists, created by cooking with chloraminated tap water and iodised table salt.

They said that limiting cooking time and temperature, and cooking with table salt fortified with iodate instead of iodide, could be safest.

Our tap water is disinfected before we drink it or use it in cooking. This is done in several ways, including by adding chlorine or molecules called chloramines that are made using ammonia.

These two processes – chlorination and chloramination – have an effect on the chemical make-up of the water.

According to the researchers, chlorine or chloramines in tap water can react with the iodised table salt added to food, creating a kind of acid called hypoiodous acid.

This in itself is not cause for concern, but the acid can then react with the food and other organic matter in the tap water to create cooking iodinated disinfection byproducts (I-DBPs) – molecules that are almost completely new to researchers.

For this study, researchers identified some molecules and tested their toxicity.

“I-DBPs formed during cooking with chloraminated or chlorinated tap water are something new to environmental chemists, toxicologists and engineers,” said Xiangru Zhang, corresponding author of the paper and Associate Professor at the Hong Kong University of Science and Technology.

“They are relevant not only to drinking water researchers and practitioners but also to the public,” he added.

The researchers analysed the I-DBPs formed during cooking with chlorinated and chloraminated tap water.

They simulated cooking with different types of tap water at varying temperatures and time, and added wheat flour and iodised salt to see what I-DBPs would be formed.

Using cutting-edge chemistry techniques, they identified 14 completely new molecules and determined the structure of nine molecules.

They then carried out tests to see how toxic nine of the molecules are and found that some of the molecules are 50-200 times more toxic than others.

The study was published in the journal Water Research.

Science Says Being Fat Actually Has Health Benefits. *Tears Of Joy*

Every health and fitness magazine you lay your eyes on these days, has tonnes of images of people with chiseled abs and toned muscles. Sort of like Greek gods decided to try some part time modelling. As a somewhat flabby dude, let me just say –

Rebloggy

Not all of us were born with perfect genes, or have the ability to say no to devilishly tasty fries from McDonald’s. But guess what? According to science, being a little obese is not always a bad thing.

Memecrunch

According to what this article on QZ says, some researchers noticed that some patients with chronic conditions fared better than others with the same conditions. The common factor among those who fared better? They were all overweight, or obese.

Healthcare and nutrition researchers are calling this the “obesity paradox”. Why paradox? Well because while on one hand, it is a known fact that there’s a direct correlation between obesity and increased chances of a number health risks, once an obese person has that condition, he/she has better chances of getting better than a non-obese person.

Booksandbark

So, what they’re saying is, (ridiculous simplification alert!) if you’re obese, you’re more likely to get a heart attack, but once you get it, you’re better suited to deal with it than a thin person.

I guess the point is, try to be as healthy as possible, but if you’re still overweight, it’s not all bad news.

12 Dieting Mistakes You Probably Did Not Know You Were Making

We all go through that phase in life when we want to lose weight desperately and take the route we feel is the easiest. I say phase, because we give it up as easily as we take it up. We end up giving up, mostly, because we find that it yields no result. Because, we hardly eat anything and have given up breakfast as well, then it must lead up to some weight loss, right? Wrong. These are only a few of the grave dieting mistakes that we make.

Sure, you will lose a few kilos initially but these mistakes harm your body more than it help. Dieting does not mean you starve yourself.

Here are a few dieting mistakes we easily make.

1. Staying away from carbs

Carbohydrates curb your hunger pangs, so, eliminating carbs from your diet altogether can make you feel more hungry. As a result, you will end up eating more than your body usually requires.

2. Eating too much of nuts and fruits

Having too much of ‘healthy food’ like nuts and fruits might not actually be so healthy. Many nuts and fruits contain high sugar and/or fat content. So while you are consuming them thinking it will help you lose weight, it adds more to body.

3. Having excess protein

Yes, protein helps build muscles but when you have it in excess amount, it gets stored in the body as fat. Having protein in controlled doses is the key.

4. Replacing food with protein bars

‘Fake’ food like proteins bars are convenient, yes, but they do not really satisfy hunger. They also contain a high amount of sugar and corn and are just a great load of processed stuff.

5. Skipping breakfast

This is one thing that everyone tends to do. Skipping or heaving only liquid for breakfast is harmful in the long run. Breakfast must contain three elements – carbs, fibre and sugar. The ideal breakfast looks something like this – toast, egg and a bowl of fruits. If you are a vegetarian, you can replace eggs with cottage cheese, spinach or mushrooms.

6. Being a night owl

Are Tumblr posts keeping you up till late? It is also adding to your weight woes. If you are getting less than five or six hours of sleep, your metabolism tends to slow down and cause hormonal changes. Also, if you remain tired (sleep deprivation), you tend to eat more.

7. Going for the salad every time

Contrary to popular belief, going for the salad always might not be the best option. Salads might not contain enough carbohydrates. So, instead, a healthy soup and sandwich or tossing a serving of brown rice and lentils is more beneficial.

8. Having dinner way too early

Consider this: you have your dinner at 8 pm but you stay awake till 2 am. Your body will demand more fuel if it has to keep on going for so long. Having an early dinner makes sense only if you go to sleep early. If not, then it is a good idea to have 70% of your food early and leave 30% for dinner.

9. Not snacking

Snack here does not mean fries and chips. But keep eating something healthy like sprouts every three to four hours. And eat in small quantities. Eating frequently keeps your metabolism at its peak.

10. Not having enough water because you’re having too much juice

There is no replacement for water. Even juices are not good enough. Moreover, water helps you manage your diet. Drinking two glasses of water can reduce your intake by 90 calories.

11. Substituting food with beverages

No amount of juices can curb your hunger. Juices, sodas, tea, coffee, skimmed milk can never be a substitute for food. Worse, it might make you gain weight. These impact only the thirst and never the hunger.

12. Ordering larger servings of low-fat food

People tend to take larger servings of low-fat food. But food that claim to be low-fat might not be so. Even if it is non-fat, it might mean more calories. A good way is to have a low-calorie salad before lunch or dinner, which reduces the appetite.

Now that we have got the basics out of the way, we must start our dieting regime from next month!

7 Junk Food Products That Actually Have Health Benefits

With all the fuss about dieting and keeping our bodies in shape, we try and avoid “junk food.” We concentrate so much on counting our calories that we forget to count the blessings that come in the form of mouthwatering delicacies.

But what if I told you that junk food is not that bad after all? While one can’t really state the oxymoron that junk food is actually healthy, we can safely say that some of these temptations actually have health benefits. Don’t believe me?

Well here are 7 foods on your “don’t” list that actually have health benefits. Check them out.

1. Chocolates

Sinking your teeth into some heavenly chocolates actually helps you live longer. According to a study published in the Journal of Nutrition, researchers have found that chocolates are high in polyphenols which is known to reduce the risk of mortality by 30% compared to those diets which contain less amounts. “They have anti-inflammatory and anti-carcinogetic properties,” says study author Cristina Andres-Lacueva, Ph.D. They also help regulate your immune system and cocoa is known for its anti anxiety properties. If you choose dark chocolate, you’ll be loading up on flavonoids, the heart-healthy compounds also found in red wine and green tea. So it’s established – tasty and healthy, chocolates are really as good as sex. So go ahead and indulge!

2. Sour Cream

Yes, yes, we know that almost 90% of sour cream is fat, but consider it in the total amount and it’s not half as bad. A serving of sour cream is generally two full tablespoons which is about 52 calories. That’s half the amount that’s in a single tablespoon of mayonnaise – and less saturated fat than you’d get from drinking a 12-ounce glass of 2 percent reduced-fat milk. See? Not a guilty pleasure after all.

3. Hot Sauce

Good news for the diet conscious! Besides making all our curries tastier, red sauce also makes us lose weight. According to a study published in the European Journal of Nutrition, hot sauce contains capsaicin, a compound that can curb your appetite by reducing levels of the hunger-causing hormone ghrelin and by raising levels of GLP-1, an appetite-suppressing hormone. Not just boosting your flavour, the sauce gives you a hot shape too!

4. Ketchup

It doesn’t just spice up your fries, made from tomatoes, ketchup is loaded with lycopene, a powerful antioxidant that can lower your risk for cardiovascular disease. Go organic and you will find 60% more lycopene per gram than conventional brands to spice up your dish.

5. Popcorn

Just because it’s  low on calories, doesn’t mean it’s low on nutrition as well. This movie munchy has high levels of polyphenols, antioxidants that can protect against heart disease and certain cancers. In fact, research shows that popcorn has the highest polyphenol level of all snack foods! As long as it comes without added flavours, you don’t need to control gluttony.

6. Butter

Though butter is a BIG NO NO for all those who are “on a strict diet,” this creamy temptation has quite a few healthy qualities. Studies actually show that the fat in butter helps our bodies better absorb vitamins, like vitamin A, D, E, and K. Make sure you’re following a healthy diet when trying to lose weight, or it may do more harm than good. So maybe a little butter won’t be that bad. After all Butter makes everything taste better.

7. Salad Dressing

Full fat salad dressing hardly has any amount of saturated fat. They also help your body in absorbing the goodness of the salad better. However, if your loading up of fat free salad dressing thinking that it’s alright, think again. The low fat dressings are sweetened to get the taste and ultimately adds up to more than 100 calories. Moreover they do not even have the benefits of the regular dressing. So go ahead and grab some of that full fat dressing! It’s not that bad for you.

Can you believe that these pleasures actually have benefits? So munch on and indulge. Everything great doesn’t have to be guilty!

Pizza Has Topped The List Of Most Addictive Foods- Here’s Why

Have you ever wondered why your mouth waters when you cross the Pizza Hut or a mini chocolate fountain in a mall?  The US National Library of Medicine has published a study done by the University of Michigan which has analysed what makes a food addictive.

According to the Metro, it is the first study which has logically explained how food turns into an addiction.

Source: @pizzahut

Just like the term ‘drug’, can mean heroin or a medicine, food can also mean meals in their natural state like vegetables and fruits, or one with added amount of carbohydrates. When food turns addictive, it’s rarely when they are in their natural state. They are altered or processed in a manner to attain a more addictive taste.

For example, grapes taste better when they come in the form of wine. A similar process maybe occurring within the food supply. In the modern food environment, there has been an outrageous increase in the highly processed food, which are processed in a way to increase the amount of refined carbohydrate. However, food which have excessive fiber or vitamin do not fall in the same category of processed food as explained by the author of the report.

According to the study, pizza has topped the list of most addictive foods followed by chocolate. Mostly all kinds of processed meals have topped the list. The top ten food in the list have a high concentration of refined carbohydrates and fat.

Utkarsh Tyagi

“Additionally, addictive substances are altered to increase the rate at which the addictive agent is absorbed into the bloodstream. For example, when a coca leaf is chewed, it is considered to have little addictive potential. However, once it is processed into a concentrated dose with rapid delivery into the system, it becomes cocaine, which is highly addictive.

“Similarly, highly processed foods, compared to naturally occurring foods, are more likely to induce a blood sugar spike. This is important, because there is a known link between glucose levels and activation of areas of the brain that are involved with addiction. While a food’s glycemic load (GL) and glycemic index (GI) are both measures of the blood sugar spike, the current study utilizes GL because it is calculated using not only the magnitude of the blood sugar spike but also the dose (grams) of refined carbohydrates. Many foods with a high GL (e.g. cake, pizza) have been highly processed to increase the concentration of refined carbohydrates, such as white flour and sugar.

“Simultaneously, fiber, protein, and water are stripped from the food, which further increases the rate that the refined carbohydrates are absorbed into the system. For example, the sugar in a highly processed, high GL food, such as a milk chocolate bar, will be more quickly absorbed into the system than the natural sugars in a banana (low GL).

“This is because the banana is unprocessed, and though it contains sugar, it also has fiber, protein, and water, which slow the rate that the sugar enters the bloodstream. Given our knowledge of addictive substances, it may then be hypothesized that the chocolate would have a higher abuse potential than the banana. In summary, it appears that highly processed foods may be altered in a manner similar to addictive substances to increase the food’s potency (dose) and absorption rate,” the author mentioned in its report.
