Using Tap Water And Salt In Cooking May Make Food Toxic

Cooking with chloraminated tap water and iodised table salt could put potentially harmful toxins in your food, a new study has warned.

Researchers from the Hong Kong University of Science and Technology and Nanjing University in China found several molecules that are almost completely new to scientists, created by cooking with chloraminated tap water and iodised table salt.

They said that limiting cooking time and temperature, and cooking with table salt fortified with iodate instead of iodide, could be safest.


Our tap water is disinfected before we drink it or use it in cooking. This is done in several ways, including by adding chlorine or molecules called chloramines that are made using ammonia.

These two processes – chlorination and chloramination – have an effect on the chemical make-up of the water.

According to the researchers, chlorine or chloramines in tap water can react with the iodised table salt added to food, creating a kind of acid called hypoiodous acid.

This in itself is not cause for concern, but the acid can then react with the food and other organic matter in the tap water to create cooking iodinated disinfection byproducts (I-DBPs) – molecules that are almost completely new to researchers.

For this study, researchers identified some molecules and tested their toxicity.

“I-DBPs formed during cooking with chloraminated or chlorinated tap water are something new to environmental chemists, toxicologists and engineers,” said Xiangru Zhang, corresponding author of the paper and Associate Professor at the Hong Kong University of Science and Technology.


“They are relevant not only to drinking water researchers and practitioners but also to the public,” he added.

The researchers analysed the I-DBPs formed during cooking with chlorinated and chloraminated tap water.

They simulated cooking with different types of tap water at varying temperatures and time, and added wheat flour and iodised salt to see what I-DBPs would be formed.

Using cutting-edge chemistry techniques, they identified 14 completely new molecules and determined the structure of nine molecules.

They then carried out tests to see how toxic nine of the molecules are and found that some of the molecules are 50-200 times more toxic than others.

The study was published in the journal Water Research.

According to what this article on QZ says, some researchers noticed that some patients with chronic conditions fared better than others with the same conditions. The common factor among those who fared better? They were all overweight, or obese.

Healthcare and nutrition researchers are calling this the “obesity paradox”. Why paradox? Well because while on one hand, it is a known fact that there’s a direct correlation between obesity and increased chances of a number health risks, once an obese person has that condition, he/she has better chances of getting better than a non-obese person.



So, what they’re saying is, (ridiculous simplification alert!) if you’re obese, you’re more likely to get a heart attack, but once you get it, you’re better suited to deal with it than a thin person.

I guess the point is, try to be as healthy as possible, but if you’re still overweight, it’s not all bad news.

1. Staying away from carbs

Pizza Has Topped The List Of Most Addictive Foods- Here’s Why

Just like the term ‘drug’, can mean heroin or a medicine, food can also mean meals in their natural state like vegetables and fruits, or one with added amount of carbohydrates. When food turns addictive, it’s rarely when they are in their natural state. They are altered or processed in a manner to attain a more addictive taste.

For example, grapes taste better when they come in the form of wine. A similar process maybe occurring within the food supply. In the modern food environment, there has been an outrageous increase in the highly processed food, which are processed in a way to increase the amount of refined carbohydrate. However, food which have excessive fiber or vitamin do not fall in the same category of processed food as explained by the author of the report.

According to the study, pizza has topped the list of most addictive foods followed by chocolate. Mostly all kinds of processed meals have topped the list. The top ten food in the list have a high concentration of refined carbohydrates and fat.

“Additionally, addictive substances are altered to increase the rate at which the addictive agent is absorbed into the bloodstream. For example, when a coca leaf is chewed, it is considered to have little addictive potential. However, once it is processed into a concentrated dose with rapid delivery into the system, it becomes cocaine, which is highly addictive.

“Similarly, highly processed foods, compared to naturally occurring foods, are more likely to induce a blood sugar spike. This is important, because there is a known link between glucose levels and activation of areas of the brain that are involved with addiction. While a food’s glycemic load (GL) and glycemic index (GI) are both measures of the blood sugar spike, the current study utilizes GL because it is calculated using not only the magnitude of the blood sugar spike but also the dose (grams) of refined carbohydrates. Many foods with a high GL (e.g. cake, pizza) have been highly processed to increase the concentration of refined carbohydrates, such as white flour and sugar.

“Simultaneously, fiber, protein, and water are stripped from the food, which further increases the rate that the refined carbohydrates are absorbed into the system. For example, the sugar in a highly processed, high GL food, such as a milk chocolate bar, will be more quickly absorbed into the system than the natural sugars in a banana (low GL).
